Tomato Bacon Pie
- 1 unbaked deep-dish pastry shells (9-inch)
- 3 medium tomatoes, cut into 1/4-inch slices
- 10 slices bacon, crisp and crumbled
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 eggs
- salt & pepper
- Bake pastry shell according to package directions and let it cool.
- Place tomatoes in crust and sprinkle with salt, pepper and bacon.
- Combine cheese, eggs and heavy cream.
- Spoon it over tomtatoes in center of pie, leaving a 1" edge around.
- Bake at 350 F for 30-40 minutes, until golden brown.
- (Cover edges of pie with a strip of foil to prevent over-browing.
