Creole SpinachCome on Vitamin A!

  1. Preheat the oven to 325 degrees.
  2. Cook the spinach according to package directions, drain, and squeeze out excess water.
  3. Melt the butter in a medium skillet over medium heat.
  4. Add the onion, garlic, salt, and pepper.
  5. Stirring constantly, cook until the onion softens a bit, about 3 minutes, then add the spinach.
  6. In a small bowl, dissolve the flour in the milk.
  7. Add to the skillet.
  8. Stir in the cheese.
  9. Scrape into a 1-quart ovenproof casserole dish and bake until lightly browned on top, about 25 minutes.
