Lemon Chess Pie
- 1 tbsp. grated lemon peel
- 1/3 cup lemon juice
- 1-1/2 tbsp. cornstarch
- 4 eggs
- 1/4 cup milk
- 1-1/4 cup sugar
- 2 tbsp. sweet butter, melted
- 2 oz. unsweetened chocolate, melted
- Filling: Place the lemon rind, lemon juice and cornstarch in a large mixing bowl; whip thoroughly.
- Add milk, eggs and sugar.
- Blend until smooth.
- Add melted butter and mix.
- Set aside.
- Crust: Melt chocolate in a double boiler.
- Pre-bake the pie crust until the edge just starts to turn brown (not too long).
- Coat the inside of the crust with the melted chocolate using a pastry brush.
- Add the filling to the pie shell and bake at 350F for approximately 30 minutes, or until filling is firm.
