Green Onion-Garlic Burgers with Creamy Bleu Cheese Dressing
- 2 ounces, weight Bleu Cheese, Plus Additional For Garnish
- 1/2 cups Sour Cream
- 1/2 cups Mayonnaise
- 1/2 cups Heavy Cream
- 1 Tablespoon White Wine
- 1/2 teaspoons Kosher Salt
- 1 pinch Garlic Powder
- Freshly Ground Black Pepper
- 1 pound Ground Chuck
- 4 whole Green Onions (including Tops), Thinly Sliced
- 2 cloves Garlic, Finely Minced
- 1 pinch Each, Salt And Pepper
- 4 whole Hamburger Buns, Split
- Butter
- First, prepare the dressing.
- In a blender or food processor, combine the bleu cheese, sour cream, mayonnaise, heavy cream, wine, salt, and pepper (to taste).
- Process until smooth.
- Transfer to a pint jar with a lid; refrigerate.
- It will thicken as it chills.
- In a large bowl, lightly toss together the ground chuck, green onions, garlic, and a pinch of salt and pepper.
- Form into 4 patties.
- Pan fry or grill to desired doneness.
- Meanwhile, butter the buns and toast them on a griddle until golden.
- Serve burgers topped with creamy bleu cheese dressing.
- Garnish with additional bleu cheese, if desired.
