John's Favorite Carrot Cake With Cream Cheese Frosting
- 3 cups grated carrots (I buy the pregrated in a bag)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 12 teaspoon salt
- 2 cups sugar
- 1 teaspoon ground cinnamon
- 4 eggs, well beaten
- 1 14 cups vegetable oil
- 1 teaspoon vanilla extract
- cream cheese frosting
- 1 (8 ounce) package cream cheese, softened
- 12 cup butter, softened
- 1 (16 ounce) package powdered sugar, sifted
- 1 teaspoon vanilla extract
- Cake:.
- Combine first 7 ingredients; stir in eggs, oil and vanilla, mixing well.
- Pour batter into 3 greased and floured 9 inch round cake pans.
- Bake at 350F for 30 minutes or until wooden pick inserted in middle comes out clean.
- Cool in pans 10 minutes; remove from pans and cool on wire racks completely.
- Spread with cream cheese frosting.
- Cream Cheese Frosting:.
- Combine cream cheese and butter, beating until smooth.
- Add powdered sugar and vanilla; beat until light and fluffy.
