John's Favorite Carrot Cake With Cream Cheese Frosting

  1. Cake:.
  2. Combine first 7 ingredients; stir in eggs, oil and vanilla, mixing well.
  3. Pour batter into 3 greased and floured 9 inch round cake pans.
  4. Bake at 350F for 30 minutes or until wooden pick inserted in middle comes out clean.
  5. Cool in pans 10 minutes; remove from pans and cool on wire racks completely.
  6. Spread with cream cheese frosting.
  7. Cream Cheese Frosting:.
  8. Combine cream cheese and butter, beating until smooth.
  9. Add powdered sugar and vanilla; beat until light and fluffy.
  10. 3 cups.
