Chocolate Amaretto Cheesecake
- 1 (16 ounce) packageround chocolate wafers
- 12 cup melted butter
- 14 teaspoon cinnamon
- 14 cup toasted almond, chopped fine (like breadcrumbs)
- 3 eggs
- 1 lb cream cheese
- 1 cup sugar
- 1 12 cups sour cream
- 6 ounces semi sweet chocolate pieces
- 12 teaspoon almond extract
- 14 cup amaretto liqueur
- Place in chocolate wafers in a food processor and process until the consistency of bread crumbs.
- Add almonds, and slowly pour in butter and cinnamon.
- Pulse to combine.
- Place in a spring form pan lined with wax paper.
- Press down and have a 1 inches lip up the side of pan.
- In a food processor, mix together the cream cheese, sour cream, and sugar.
- When combine add eggs one at a time.
- Then add the liquids.
- Blend until all ingredients are a smooth batter.
- At this point you can either melt the chocolate chips and incorporate that into the batter; or place them in a ziplock bag and add 1 teaspoons of powdered sugar.
- Shake off excess sugar and add to batter and mix.
- pour into the chilled crust.
- place on a baking sheet and bake for 45 minutes in preheated 350 oven.
- it will be shaky when it comes out of the oven, but will firm up with cooling.
