Aubergine Mozzarella Recipe

  1. Cut aubergine into 1 1/2 inch slices; divide among 4 pcs of heavy duty foil.
  2. Season with salt and pepper, oregano.
  3. Top each with onion, cheese and tomato half, cut side up.
  4. Sprinkle with salt and rosemary leaves.
  5. Wrap securely in foil.
  6. Place on grill 3 inches from coals.
  7. Cook 30 min.
  8. Serve with Italian sausages and crusty French bread heated on the grill.
  9. 4 servings.
