Chocolate Chip Shortbread
- 1 lb salted butter, softened
- 34 cup icing sugar
- 12 cup cornstarch
- 2 12 cups all-purpose flour
- 1 cup semi-sweet chocolate chips
- Line 2 large rimless baking sheets with parchment paper or leave ungreased; set aside.
- In a large bowl, beat together the butter, icing sugar and cornstarch until well blended.
- Mix in the flour, 1/2 cup at a time.
- Stir in the chocolate chips.
- Drop the batter by scant tablespoons about 1" apart onto the prepared baking sheets.
- Bake in the centre of a 300 degree F oven until firm and light golden on the bottom, about 30 minutes.
- Let cool on the pan on a rack for 10 minutes, then transfer to racks to cool.
