Spicy Aloo Bhatura

  1. Peel and mash potatoes.
  2. Sift flour.
  3. Mix together potatoes and flour.
  4. Knead to a soft dough by adding a little water.
  5. Add cumin seeds, coriander, chilies and salt.
  6. Shape dough into 12 small balls.
  7. Roll out on a floured board into rounds 1/8-inch thick and 5 inches in diameter.
  8. Deep-fry bhaturas in hot oil, one at a time, until golden brown on both sides and puffy.
  9. Serve hot with channa.
