Grilled Fish and Peppers
- 3 cups Kraft Zesty Italian Dressing
- 2 Tbsp. crushed red pepper
- 6 each green bell peppers Target 1 pkg For $2.99 thru 02/06
- 6 each red bell peppers Target 1 pkg For $2.99 thru 02/06
- firm whitefish fillets, such as halibut or grouper (3 oz. each)
- 6 Tbsp. Kraft Shredded Parmesan
- 6 Tbsp. fresh cilantro or basil, finely chopped
- Combine dressing and crushed red pepper; set aside.
- Cut bell peppers lengthwise in half; remove and discard membranes and seeds.
- Cut each piece crosswise in half; place in non-reactive pan.
- Pour half of the dressing mixture over peppers; toss to coat.
- Set aside.
- Place fish in separate non-reactive pan; pour remaining dressing mixture over fish.
- Refrigerate peppers and fish 15 to 20 minutes to marinate.
- Remove fish from marinade; discard marinade.
- Remove peppers from marinade, reserving marinade.
- Place fish and peppers on well-oiled grill over medium-high heat.
- Cook 5 minutes; gently turn over fish and peppers.
- Brush with reserved marinade from peppers; cook an additional 4 to 5 minutes or until fish flakes easily with fork and peppers are tender.
- Place 1 fish fillet on each serving plate; top with 1 each green and red pepper piece.
- Sprinkle with 1 tsp.
- each cheese and cilantro.
