Tortellini and Sausage Soup

  1. In a fry pan, add olive oil and saute onion, celery and garlic, until onion is soft.
  2. Set aside.
  3. Brown Italian sausage in pan.
  4. Drain grease, and set aside.
  5. In a large pot, add chicken stock, parsley, basil, salt and pepper, sausage and the sauteed onion, garlic and celery.
  6. Bring to a boil, and reduce heat.
  7. Add tortellini and let simmer for 6-10 minutes.
  8. Sprinkle with Parmesan and serve with warm, crusty bread!
