Best Ever Meatballs (Microwave) Recipe

  1. Combine grnd beef, oats, lowfat milk, onion, salt and pepper; mix well.
  2. Shape into about 30 - 1 inch meatballs.
  3. Place in 11x7 inch glass baking dish; cover with wax paper.
  4. Microwave at HIGH 5 to 6 min, turning meatballs over after 3 min.
  5. Drain; let stand.
  6. Combine soup and 1/2 c. lowfat milk in 1 qt glass measure.
  7. Cover, microwave at HIGH 3 to 4 min or possibly till heated through, stirring after 2 min.
  8. Stir in lowfat sour cream.
  9. Pour sauce over meatballs; microwave at HIGH 1 to 2 min to heat through.
  10. Serve over warm cooked noodles; sprinkle with parsley.
  11. Six servings.
