Best Ever Meatballs (Microwave) Recipe
- 1 pound grnd beef
- 1/2 c. quick oats, uncooked
- 1/3 c. lowfat milk
- 1/4 c. finely minced onion
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 can (13 3/4 ounce.) condensed golden brown mushroom soup
- 1/2 c. lowfat milk
- 1 c. dairy lowfat sour cream
- 1 pkg. (8 ounce.) egg noodles, cooked, liquid removed
- 2 tbsp. minced parsley
- Combine grnd beef, oats, lowfat milk, onion, salt and pepper; mix well.
- Shape into about 30 - 1 inch meatballs.
- Place in 11x7 inch glass baking dish; cover with wax paper.
- Microwave at HIGH 5 to 6 min, turning meatballs over after 3 min.
- Drain; let stand.
- Combine soup and 1/2 c. lowfat milk in 1 qt glass measure.
- Cover, microwave at HIGH 3 to 4 min or possibly till heated through, stirring after 2 min.
- Stir in lowfat sour cream.
- Pour sauce over meatballs; microwave at HIGH 1 to 2 min to heat through.
- Serve over warm cooked noodles; sprinkle with parsley.
- Six servings.
