Cheesy Carrot Bake

  1. Peel, slice and cook carrots in boiling water until tender.
  2. Drain and mash well.
  3. Add butter, onion and cheese to seasonings.
  4. Turn into casserole dish.
  5. Sprinkle top with buttered bread crumbs before baking.
  6. Bake at 350 F for 40 minutes, until bubbling.
  7. Garnish with parsley if you want to.
