Minestrone With Meatballs
- 1 cup zucchini
- 12 cup onion, chopped
- 2 cups great northern beans
- 2 cups tomatoes
- 12 cup carrot, diced
- 2 garlic cloves, crushed
- 2 cups beef broth
- 12 lb meatballs
- 2 tablespoons vegetable oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- parmesan cheese (to garnish)
- Saute onion, zucchini and garlic in oil until tender.
- Add to soup pot with other ingredients and simmer 1 to 1 1/2 hours.
- Add additional water if needed.
- Garnish with parmesan cheese.
- Servings and yield estimated.
