Cashew Chicken With Baby Corn and Okra
- 2 lbs chicken breasts, bite size pieces
- 1 teaspoon salt
- 1 teaspoon sugar
- 18 teaspoon white pepper
- 1 teaspoon fresh ginger, minced
- 1 teaspoon garlic, minced
- 1 tablespoon shallot, minced
- 1 tablespoon soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons oil
- 1 cup baby corn
- 1 lb chinese okra, 1 inch chuck
- 1 12 cups chicken broth
- cornstarch roux
- 1 cup cashew nuts, whole
- oil
- In a mixing bowl combine chicken, salt, sugar, pepper, ginger, garlic, shallots, soy sauce, cornstarch and oil and blend well and marinade for 30 minutes.
- In a very hot wok coat with oil and add in the chicken mixture and stir-fry until halfway done.
- Add in the corn and okra and stir-fry for 2 minutes.
- Pour in the chicken broth to a boil.
- Thicken with some cornstarch roux.
- Add the cashew nut.
