Sugar Free Chocolate Cake & Peanut Butter Glaze

  1. For the cake: Preheat the oven to 350 degrees F. Put all of the ingredients in a bowl and stir until combined.
  2. Pour the batter into a loaf pan coated with cooking spray.
  3. Bake 40 to 50 minutes, rotating the pan about halfway through the baking time.
  4. When a toothpick inserted into the middle comes out clean, its done.
  5. Let the cake cool completely, and then top with Peanut Butter Glaze (recipe follows).
  6. Slice, serve, and try not to consume it all immediately.
  7. For the glaze: Combine all of the ingredients in a bowl and mix with a hand blender until the stevia is dissolved.
  8. If not dissolving, you can gently heat the mixture on low on the stove while stirring.
  9. Spread the glaze on the cake.
