Sugar Free Chocolate Cake & Peanut Butter Glaze
- 1- 1/4 cup Oat Flour
- 1/2 teaspoons Salt
- 1 cup Stevia In The Raw
- 1 cup Warm Water
- 13 cups Unsweetened Dark Cocoa Powder
- 1 teaspoon Vanilla Extract
- 2 Tablespoons Vegetable Oil
- 1 teaspoon Apple Cider Vinegar
- 1 teaspoon Baking Soda
- 1/2 cups Stevia In The Raw
- 2 Tablespoons Unsweetened Cocoa Powder
- 2 Tablespoons Vegetable Oil
- 2 teaspoons Vanilla Extract
- 2 Tablespoons Fat Free Milk
- 2 Tablespoons Natural Peanut Butter
- For the cake: Preheat the oven to 350 degrees F. Put all of the ingredients in a bowl and stir until combined.
- Pour the batter into a loaf pan coated with cooking spray.
- Bake 40 to 50 minutes, rotating the pan about halfway through the baking time.
- When a toothpick inserted into the middle comes out clean, its done.
- Let the cake cool completely, and then top with Peanut Butter Glaze (recipe follows).
- Slice, serve, and try not to consume it all immediately.
- For the glaze: Combine all of the ingredients in a bowl and mix with a hand blender until the stevia is dissolved.
- If not dissolving, you can gently heat the mixture on low on the stove while stirring.
- Spread the glaze on the cake.
