Barbecued Salted Cod
- 1 slice of salted fish (approx. 250g)
- 2 tbsp olive oil, extra virgin
- 3 garlic cloves, peeled and finely chopped
- With salted fish you have to place in cold water 24 hours prior to cooking to remove some of the saltiness.
- Change the water 2-3 times in that 24 period.
- Drain the cod well from the water prior to cooking.
- Set up your barbecue.
- And when its the right temperature place the cod on the grill.
- Grill on both sides for 5-10 minutes or until it has become slightly charred on each side and crispy.
- Then remove, place on a plate and using two forks de-bone and shred the cod.
- Drizzle olive oil and add the garlic over the shredded cod.
- You may add more oilve oil and garlic if you wish.
- Serve with a nice piece of crusty bread.
- And enjoy.
