Low Fat Turkey Bacon and Vegetable Strata

  1. In a nonstick pan, cook turkey bacon until fat renders.
  2. Drain as much fat as possible.
  3. Add onions, peppers, and broccoli.
  4. Cook about 5 minutes, just to soften.
  5. Tear bread into 1 inch pieces and layer in a large casserole dish (9x13).
  6. Stir bacon and vegetable mixture into bread.
  7. In a bowl combine eggs, egg whites, milk, herbs, mustard, salt, and pepper.
  8. Pour over bread in the casserole dish.
  9. Cover and store casserole in the fridge overnight.
  10. In the morning, remove from fridge and top with cheeses.
  11. Bake in a 350F oven for about an hour until fully cooked and a toothpick comes out clean.
