Cinnamon Apple Bars
- Cooking spray
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking soda
- 1 cup canned unsweetened apple slices or canned pears in fruit juice, drained, cut into 1/2-inch pieces
- 3/4 cup firmly packed light brown sugar
- 1/2 cup cranberry applesauce or unsweetened applesauce
- 1/2 cup egg substitute
- 1/4 cup sugar
- 2 tablespoons canola or corn oil
- 1 teaspoon vanilla extract
- Preheat the oven to 350F.
- Lightly spray a 13 x 9 x 2-inch metal baking pan with cooking spray.
- In a medium bowl, stir together the flour, baking powder, cinnamon, and baking soda.
- In another medium bowl, stir together the remaining ingredients.
- Add the flour mixture, stirring until just moistened.
- Pour the batter into the baking pan.
- Bake for 20 minutes, or until a knife inserted in the center comes out clean.
- Let cool on a cooling rack for 10 minutes.
- Cut into 36 bars.
