Brussels Sprout Casserole with Bacon & Gorgonzola

  1. Preheat oven to 350 degrees F.
  2. Spray a 3-quart baking dish (or smaller) with nonstick cooking spray.
  3. In a large skillet, melt butter and add bacon.
  4. Crisp bacon for about 5 minutes.
  5. Then add Brussels sprouts with a little salt and pepper and continue to cook until softened, about 5 minutes.
  6. Add flour, stir, and cook for another minute.
  7. Gradually add cream and half-and-half.
  8. Reduce heat to medium-low and cook another 5 minutes.
  9. Remove skillet from heat and stir in mozzarella.
  10. Pour Brussels sprout mixture into baking dish and sprinkle top with Gorgonzola.
  11. Bake for about 25 minutes and, with a few minutes left, turn broiler on to get a nice golden cheesy crust on top.
  12. Serve immediately.
