Cajun Blackened Prawn Cups

  1. SPRAY the tortillas with oil.
  2. Press into 6 x 3/4 cup capacity greased Texas muffin pans and bake in a hot oven 200C for 68 minutes or until crisp.
  3. Cool slightly before removing from the pans.
  4. COMBINE the PHILLY, coriander, spring onions, lemon juice and seasonings.
  5. Toss prawns in spice mix then chargrill over a medium heat for 35 minutes or until cooked.
  6. DIVIDE the prawns, lettuce and tomatoes between cups then top each with PHILLY mixture and garnish with coriander.
  7. Serve immediately.
