Picnic Salad Rolls Recipe
- 1 c. shredded carrot
- 3/4 c. green pepper
- 3/4 c. minced tomato
- 3/4 c. minced celery
- 3 tbsp. minced onion
- 3 tbsp. minced fresh parsley
- 3 tbsp. minced dill pickle
- 1/2 c. garlic-flavored lowfat sour cream dip
- 1/3 c. mayonnaise
- 1/4 teaspoon salt
- 10 hard rolls
- Leaf lettuce
- Combine first 7 ingredients tossing well.
- Combine dip, mayonnaise and salt and mix well.
- Fold into vegetable mix.
- Cut a hole in tops of rolls and scoop out centers leaving 1/2 inch shell.
- Line roll with lettuce leaf and spoon in mix.
- Wrap tight and chill.
