Lentil and Feta Salad

  1. Add lentils, garlic and bay leaf to boiling water and simmer for 20 minutes or until lentils are tender.
  2. Drain and rinse under cold water.
  3. Discard the garlic and bay leaf.
  4. Combine the lentils, celery, onion, pepper, parsley and rosemary.
  5. Whisk the lemon and olive oil together and drizzle over the lentil mixture.
  6. Add the feta cheese and mix.
  7. Season to taste with salt and pepper.
