Monterey Chicken
- 4 whole Chicken Breasts
- 2 ounces, fluid Barbeque Sauce Of Your Choice
- 4 ounces, weight Shredded Monterey Cheese
- 4 whole Crisply Cooked Bacon Strips, Cut In Half
- Preheat your oven to 400 F. Rinse and pat dry the chicken breasts, and trim any fat.
- Package the chicken in parchment paper packets (instructions can be found via Google search), and bake for about 20-25 minutes, or until the chicken reaches 165F internally.
- You can also grill the chicken, but this will produce a very moist chicken that is perfect for this dish.
- When the chicken is done, remove it from the parchment paper.
- Brush a little barbecue sauce onto each breast, top with some cheese, and two pieces of bacon.
- This recipe is very easily adjustable to the number of people you are feeding.
- You can make just one for yourself, or enough to feed your whole family.
