Lemon Cream Pie
- 1 c. sugar (granulated)
- 4 Tbsp. cornstarch
- dash of salt
- 1 c. milk
- 3 eggs, slightly beaten
- 1/4 c. melted butter
- 1 baked, deep dish pie shell
- 1 tsp. grated lemon peel
- 1/4 c. fresh lemon juice
- 1 c. sour cream
- 1 c. cream, whipped
- 2 Tbsp. powdered sugar
- 1/2 tsp. vanilla
- In saucepan, combine 1 cup granulated sugar, cornstarch and salt.
- Stir in milk.
- Bring to a boil and cool until thick.
- Blend small amount of hot mixture into slightly beaten eggs.
- Add all egg mixture to cooked mixture.
- Cook and stir until thick.
- Remove from
- heat.
- Add butter, lemon peel and lemon juice.
- Mix well. Cover and cool.
- Fold in sour cream and spoon into baked pie shell.
