California Tuna Sandwiches--Diabetic Diet

  1. Prepare California Guacamole (recipe to be posted)
  2. In a bowl, combine guacamole, tuna, celery, and onion and mix well.
  3. Lightly toast pita pockets and cut in half.
  4. Fill each half with the tuna mixture and 1/2 lettuce leaf.
  5. Garnish with radish slices.
