Iowa Corn Chowder
- 1/2 cup chopped salt pork
- 1 md. onion, chopped
- 1/2 cup sliced celery
- 1/2 md. green bell pepper, diced
- 1-1/2 cup diced potatoes
- 2 cups water
- 1 lg. bay leaf
- 1 tsp. salt
- 4 tbsp. all-purpose flour
- 2 cups milk
- 1/2 cup light cream
- 2 cups corn, cut fresh from cob
- Brown salt pork in heavy saucepan; add onion and cook for three minutes.
- Add next six ingredients.
- Simmer until potatoes are tender.
- Mix flour with a little milk; add that and the remaining milk to potato mixture.
- Add cream and corn; heat gently.
