Orazio's Bruschetta
- 6 md. tomatoes, diced
- 1/2 cup olive oil
- 2 tbsp. chopped fresh basil
- 1 tbsp. balsamic vinegar
- 2 tsp. coarsely ground black pepper
- 1 tsp. salt
- 8 slices Italian bread (each 1-inch thick)
- Romano cheese
- In a bowl combine all of the above ingredients except bread and cheese.
- Cut some Italian bread into thick slices and toast lightly if too soft to prevent it from getting too soggy.
- Top the bread with the tomato mixture and bake in a 350F oven for 8 minutes.
- Place on plate and top with Romano cheese.
