Lora's Sweet Potato Casserole Recipe

• 4 c. cooked & liquid removed sweet potatoes
• 1 c. sugar
• 2 Large eggs
• 1 teaspoon salt
• 1 1/2 c. sweet lowfat milk
• 1 c. coconut
• 2 teaspoon vanilla

1. Mix all ingredients in large mixing bowl and beat till very smooth.
2. Pour into large casserole and bake at 350 degrees for 40 to 45 min.
