Cajun Corn Chowder Recipe
- 2 1/4 c. Skim lowfat milk
- 1 3/4 c. Chicken broth
- 1 can Green Giant Mexicorn 12oz.
- 1 c. Corn, frzn Celery seed
- 1 x Pepper, small, diced Cayenne pepper Paprika Garlic Pwdr Onion Pwdr Coarse Black pepper Marjoram
- 1 c. Onions, minced
- 1 c. Celery, minced
- 2 Tbsp. Margarine
- Place lowfat milk, chicken broth, Mexicorn, corn and peppers in a large saucepan.
- Shake in spices to taste.
- In another pan, saute/fry onions and celery in margarine; then add in to broth.
- Simmer 10 to 15 min; let stand 1 to 2 hrs.
- Reheat and serve.
