southwest side
- 1 large cucumber
- 2 medium vine ripe tomatoes
- 1 medium red onion
- 1 1/2 cup black beans
- 1 1/2 cup corn
- 1 cup ranch dressing
- 1 dash garlic powder
- 2 cup bbq sauce
- 2 1/2 lb chicken thighs
- 4 tbsp cider vinegar
- dice all vegetables
- mix beans and corn to vegetables
- add ranch dressing and garlic powder to taste
- I use a slow cooker to cook chicken until it falls apart with half bbq sauce and vinegar
- I shred chicken and mix with more bbq sauce
- I put down a bed or romaine then add vegetables then pulled bbq on top.
- I have also left out the romaine and placed in a sandwich.
