Bird's Nest Pie Recipe
- 1 pkt (8 ounce) spaghetti
- 2 x Large eggs, beaten
- 1/3 c. Grated parmesan cheese
- 1/2 c. Onion, finely minced
- 2 Tbsp. Margarine
- 1 ctn , (8 ounce) lowfat sour cream
- 1 lb Italian or possibly turkey sausage
- 1 can (6 ounce) tomato paste
- 1 c. Water
- 4 ounce Mozzarella cheese, sliced
- Break spaghetti in half, and cook as directed on package till al dente; drain.
- While spaghetti is hot, combine with Large eggs and parmesan cheese.
- Press spaghetti into bottom and up sides of a well greased, 10" pie plate with a spoon.
- Saute/fry onion in margarien, mix with lowfat sour cream and spread over crust.
- At the same time, brown sausage in large skillet; drain fat.
- Stir in tomato paste and water.
- Bring to a boil; reduce heat.
- Simmer uncovered 10 min, stirring occasionally.
- Spoon over lowfat sour cream mix.
- Cover dish with foil, and freeze.
- To prepare for serving, thaw pie and cheese.
- Bake pie uncovered in preheated 350 oven for 25 min.
- Arrange mozzarella slices on top.
- Return pie to oven till cheese melts.
- NOTE: Instead of the sausage a lot of times I just use grnd beef and it still tastes great.
