Wheat Berry Salad With Zing

  1. In a medium saucepan combine water and wheat berries.
  2. Bring to a boil, reduce heat to a simmer.
  3. Cover and cook 50 minutes or until tender (like barley).
  4. Drain any remaining liquid.
  5. Stir in black beans, mango, orange, onion, carrot, pepper, chutney, vinegar, sesame oil and ginger.
  6. Toss well, salt to taste.
  7. Add avocado.
  8. Make a nest of cabbage on 4 plates.
  9. Fill with wheat berry mixture.
  10. Sprinkle with black sesame seeds.
  11. Serve at room temp or chilled.
