Healthy Crepes
- 2 medium eggs
- 1 tbsp bulgur flour
- 1 tbsp whole wheat flour
- 1 tbsp ground chia seeds
- 6 tbsp milk
- 2 tsp vanilla extract
- 2 tbsp coconut oil
- Whisk eggs
- Add flours and ground chia seeds and mix
- Whisk in milk, coconut oil, and vanilla
- Heat 9 inch frying pan to medium heat
- Pour batter into pan, cook for 2 minutes or until golden brown
- Flip and cook for another minute
- Repeat until batter is done
- Serve warm with berries, yogurt, nuts, etc.
- Note: add more milk if too thick
