Apple-Cherry Matzo Kugel Cups

  1. Add hot water to matzo in medium bowl; stir.
  2. Let stand 15 min.
  3. Heat oven to 350F.
  4. Beat 4 oz.
  5. cream cheese, eggs, sugar and cinnamon in large bowl with mixer until blended.
  6. Drain matzo; squeeze out excess water.
  7. Add matzo to cream cheese mixture; mix well.
  8. Stir in fruit.
  9. Spoon half the batter into 12 muffin pan cups sprayed with cooking spray.
  10. Cut remaining cream cheese into 12 pieces.
  11. Place 1 cream cheese piece in center of batter in each muffin cup; cover with remaining batter.
  12. Bake 20 to 25 min.
  13. or until edges are crisp and tops are lightly browned.
  14. Cool 15 min.
  15. before removing from pan to serve.
