Economical fruit cake
- 1 cup milk
- 180 grams margarine
- 1 cup sugar
- 1 cup dried fruit. (raisins/sultanas/bakers mix)
- 2 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- pinch salt
- 2 eggs
- Preheat oven to 180degrees Celcius
- Place margarine, dried fruit, milk and sugar in a saucepan and boil.
- Cinnamon can be added at this stage or later
- Sift the flour ,baking powder, salt and cinnamon together in a bowl.
- Once boiled ingredients have cooled down, blend them with the dry ingredients
- Blend the eggs into the mixture, avoid overbeating and crushing the fruits
- Pour the batter into a greased baking pan and bake for about 30minutes
