Gin Rickey

• 1 3/4 ounces Plymouth gin
• 3/4 ounce homemade Lime Cordial (page 157)
• 4 ounces club soda
• 1 lime wheel, for garnish

1. In a tall Collins glass, build the drink by pouring in the gin and lime cordial.
2. Fill up with large cold ice cubes and cover the glass with a small shaker top.
3. Shake briefly, remove the shaker top, and top off with the club soda.
4. Garnish with the lime wheel.
5. Dominant Flavors: juniper and lime
6. Body: light, refreshing
7. Dryness: dry to medium
8. Complexity: low
9. Accentuating or Contrasting Flavors: kaffir lime oils and honeyed agave
10. Finish: short, carbonated
11. Glass: Collins
