Hot Curried Beef
- 500g beef rump steak, thinly sliced
- 1 tablespoon oil
- 1 onion, cut into thin wedges King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, crushed
- 1 tablespoon curry powder
- 1 teaspoon fresh grated ginger
- 3/4 cup water
- 1/4 cup apple juice
- 1 tablespoon fruit chutney
- 1 tablespoon VEGEMITE
- 2 teaspoons brown sugar
- 1 teaspoon cornflour
- steamed rice, to serve
- steamed greens, to serve
- Heat half the oil in a non-stick frying pan or wok over high heat.
- Cook beef in batches until well browned; remove and set aside.
- Heat remaining oil in pan over medium heat and stirfry onion, garlic, curry powder and ginger until tender.
- Add the combined water, apple juice, chutney, VEGEMITE, brown sugar and cornflour to pan.
- Bring to the boil, stirring until thickened.
- Return beef to pan and heat through.
- Serve with steamed rice and greens.
