Shrimp Quesadillas
- 1/2 cup ricotta cheese
- 1 md. green onion, sliced
- 2 tbsp. Tabasco-brand green sauce
- 4 7-inch flour tortillas
- 1/2 lb. md. shrimp, cooked, peeled, deveined and chopped
- 1/2 cup shredded Muenster cheese
- Preheat oven to 450F.
- In a small bowl, combine ricotta cheese, green onion and green sauce.
- Spread on 2 flour tortillas; sprinkle with half of chopped shrimp.
- Top with remaining tortillas.
- Top tortillas with remaining shrimp, tomato and cheese; sprinkle with remaining 1 tbsp.
- green sauce.
- Bake 5 to 8 minutes or until cheese is melted.
- To serve cut into wedges.
