Zesty Mexican Soup
- 2 cups cubed cooked chicken
- 1 (14 ounce) can reduced-sodium chicken broth
- 1 (11 1/2 ounce) can vegetable juice cocktail
- 1 (15 1/2 ounce) can whole kernel corn, drained
- 1 cup salsa (any flavor)
- 1 (4 1/2 ounce) chopped green chilies
- 14 cup chopped fresh cilantro
- In 3-quart saucepan, mix all ingredients except cilantro.
- Heat to boiling over medium-high heat.
- Reduce heat to low; simmer 10 minutes or until thoroughly heated; stirring occasionally.
