Fruit Bowl With Sherry Dressing
- 1 (13 1/2 oz.) can pineapple chunks (in syrup)
- 1 egg
- 1 tsp. cornstarch
- 1/4 c. cream sherry
- 1/4 tsp. salt
- 3 Tbsp. lemon juice
- 3 Tbsp. sugar
- 1/2 c. sour cream
- 1 pt. strawberries
- 1 can mandarin oranges, drained
- 2 bananas, sliced
- lettuce leaves
- Drain pineapple, reserving syrup.
- In top of double boiler, beat egg with cornstarch and add 1/4 cup of syrup.
- Whisk in sherry, salt, lemon juice and sugar.
- Cook over hot water, stirring constantly, until thickened.
- Remove from heat and cool. Fold in sour cream.
- Wash and halve strawberries.
- Mix with pineapple, orange segments and bananas.
- Toss with dressing just before serving in a lettuce-lined bowl.
