Rice with Hearts of Palm
- 4 cups cooked white rice
- 1 cup sour cream
- 2 cups grated mild cheese such as Monterey Jack
- 1 cup tomato sauce
- 2 cups thinly sliced or diced hearts of palm
- 2 to 3 Tbs. butter
- Preheat oven to 375F.
- Grease 3-qt.
- ovenproof baking dish.
- Layer all ingredients, starting with rice, 1/2 cup sour cream in dabs, 1 cup cheese, 1/2 cup tomato sauce and 1 cup hearts of palm.
- Repeat until all ingredients are used up.
- Dot top with butter.
- Bake for 15 to 20 minutes, or until cheese melts.
- Remove from oven, and serve hot.
