Passionfruit Curd Recipe

  1. ---Prepare Ingredients---
  2. Beat eggs and strain into a bowl
  3. Add all sugar, butter, water, and passionfruit juice to bowl
  4. Cook all over a bain marie, stirring constantly
  5. Cook until the mixture coats the back of a spoon
  6. ---Cool Down---
  7. Strain through a fine strainer and cool down over ice
  8. ---Serve---
  9. The curd can be spread on toasted brioche or served with fresh fruit and is also served as accompaniment for cakes
