Comfort Tomato Stew and Rice Recipe

  1. pre-heat soup pot and add two tablespoons of olive oil on medium/high heat
  2. chop up the clove of garlic
  3. dice the onion and eggplant
  4. cut the corn off the core
  5. add in the garlic, onion, eggplant and corn in the pot
  6. salt and pepper the vegetables
  7. chop up the tomatoes and add to the pot when the vegetables have softened
  8. turn the heat to medium
  9. add in basil leaves (I like them whole, chop if preferred)
  10. salt and pepper the tomatoes
  11. add in the cup of chicken stock and tablespoon of tomato paste
  12. let it simmer and thicken and pour over rice
  13. I added a squeeze of fresh lemon juice...but that's my personal preference

tomatoes, yellow onion, eggplant, corn, clove of garlic, olive oil, chicken stock, handful basil, tomato paste, salt, lemon
