Summer Squash & Goat Cheese Pizza
- 1/2 cans Pillsbury Prepared Pizza Dough (don't Judge Me)
- 1/4 cups Local Goat Cheese
- 3 Tablespoons Part Skim Ricotta
- 1 whole Zest Of 1 Lemon
- 1 clove Garlic, Minced
- 1/2 teaspoons Fresh Thyme (or 1/4 Tsp Dried)
- 1/2 teaspoons Salt
- 1/2 whole Zucchini, Sliced As Thin As Possible
- 1/2 whole Summer Squash Or Other Yellow Squash, Sliced As Thinly As Possible
- 1 Tablespoon Extra Virgin Olive Oil
- Preheat oven to 400 degrees.
- Form an 8 inch round using your favorite pizza dough recipe, or 1/2 of a can of prepared dough such as Pillsbury.
- Combine the goat cheese, ricotta, lemon zest (reserve a pinch) and garlic in a small bowl.
- Stir until incorporated and velvety.
- Add a drizzle of olive oil if it is too clumpy.
- Room temperature cheeses will be helpful.
- On a greased baking sheet, spread the cheese mixture on the dough round, leaving a 1/8 inch border.
- Sprinkle the top of the cheese mixture with thyme and salt.
- Layer the thinly sliced squash discs on top of the cheese mixture in whatever arrangement you would like.
- I did concentric circles of each type, you could choose to alternate every other piece.
- Drizzle with olive oil and season with fresh cracked pepper to taste.
- Sprinkle with the reserved lemon zest.
- Put the baking sheet into the oven and bake for 8-10 minutes.
- Remove baking sheet from oven.
- Using a spatula remove pizza from baking sheet and transfer directly the the oven rack.
- Finish baking for 3-4 minutes or until the edges of the crust and squash slices turn pretty and golden.
