Chocolate Chip Shortbread

  1. Preheat oven to 325.
  2. In a large bowl beat 1/2 cup icing sugar, butter and vanilla until light and fluffy.
  3. Stir in flour and chocolate chips, mix until dough forms.
  4. Shape into 1 inch balls, place 1 inch apart on ungreased cookie sheet.
  5. Bake for 15 to 20 minutes or until set but not brown.
  6. Remove immediately, cool slightly and roll icing sugar.
  7. Cool completely and re roll in more icing sugar.
