Chicken Salad
- 16 ounces, weight Seitan
- 1/2 cups Vegan Mayo
- 2 teaspoons Red Wine Vinegar
- 2- 1/4 teaspoons Agave Nectar (or Honey)
- 1/2 cups Red Grapes
- 1 whole Green Onion
- 1/2 cups Pecans, Toasted And Chopped
- 1.
- Dice seitan into bite-sized cubes.
- Saute in an oiled skillet, over medium heat until brown all over (about 8 minutes).
- Set aside to cool slightly.

- In a large bowl, whisk together mayonnaise, vinegar, and agave nectar.
- 3.
- Toss seitan, grapes, onion, and pecans in with the dressing.
- Chill 30 minutes before serving.
