Chicken Couscous with Raisins and Lime Juice

  1. Heat oil in a 12-inch skillet over medium heat.
  2. Add chicken and cook 6 to 7 minutes or until pale golden, stirring occasionally.
  3. Meanwhile cut tomatoes in half and mince garlic.
  4. Add garlic to skillet and cook 1 minute longer.
  5. Add tomato halves and cook 1 minute more, stirring occasionally.
  6. Add chicken broth and raisins and bring to a boil.
  7. Stir in couscous.
  8. Cover skillet and remove from heat.
  9. Let stand 5 minutes.
  10. Chop parsley and squeeze limes (you need 1/4 cup juice).
  11. Uncover skillet and stir in parsley, lime juice, salt and pepper.
  12. Toss gently to mix.
  13. Serve immediately.
