Sweet Cherry-Apricot 'Light' Jam

  1. MEASURE prepared fruit and lemon juice into a large saucepan.
  2. MEASURE sugar and set aside.
  3. COMBINE fruit pectin crystals with 1/4 cup of measured sugar.
  4. STIR pectin mixture into fruit.
  5. PLACE saucepan over high heat and stir until mixture comes to a full boil.
  6. STIR in remaining sugar.
  7. Continue to cook and stir over high heat until mixture returns to a full rolling boil.
  8. Boil hard 1 minute, stirring constantly.
  9. Remove from heat.
  10. STIR and skim foam for 5 minutes to prevent floating fruit.
  11. POUR quickly into warm, sterilized jars filling up to 1/4-inch from rim.
  12. SEAL while hot with sterilized 2-piece lids with new centres.
