White Bean, Parsley & Garlic Mash
- 2 tablespoons olive oil
- 12 small onion, finely chopped
- 2 garlic cloves, chopped
- 2 (15 ounce) cans cannellini beans, drained
- 1 12 fluid ounces vegetable stock
- 12 cup flat leaf parsley, roughly chopped
- 2 pinches salt
- 1 pinch pepper
- Heat oil in saucepan and tip in chopped onion.
- Cook gently for 5 minutes.
- Add the chopped garlic cloves and cook for another 2 minutes until soft.
- Tip the beans into the pan and mash roughly.
- Add stock to loosen as you mash.
- Stir in the parsley and the salt and pepper.
